- 1 lb boneless skinless chicken thighs (or breasts), cut into chunks
- 1 cup long-grain white rice rinsed
- 2 cups chicken broth
- ½ cup BBQ sauce mesquite or honey-style
- ¼ cup raw honey
- 1 cup mixed vegetables frozen or fresh
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp vegetable or olive oil
- Optional: sliced green onions parsley for garnish
Season chicken with half the spices.
Sear chicken in oil until golden; set aside.
Toast rice with remaining spices.
Add broth, BBQ sauce, honey; stir well.
Nestle chicken back into pan.
Cover and simmer 15 min.
Add vegetables; cook 5 more min.
Rest 5 minutes, fluff, and garnish before serving.
