Ingredients
  

  • 1 lb boneless skinless chicken thighs (or breasts), cut into chunks
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth
  • ½ cup BBQ sauce mesquite or honey-style
  • ¼ cup raw honey
  • 1 cup mixed vegetables frozen or fresh
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable or olive oil
  • Optional: sliced green onions parsley for garnish

Instructions
 

  • Season chicken with half the spices.
  • Sear chicken in oil until golden; set aside.
  • Toast rice with remaining spices.
  • Add broth, BBQ sauce, honey; stir well.
  • Nestle chicken back into pan.
  • Cover and simmer 15 min.
  • Add vegetables; cook 5 more min.
  • Rest 5 minutes, fluff, and garnish before serving.

Notes

  • Rinse rice well for fluffier texture.
  • Chicken thighs stay juicier but breasts work too.
  • Add jalapeños or red pepper flakes for spice.
  • To use brown rice, increase broth and extend cook time.
