Ingredients
  

  • 2 lbs beef chuck cut into 1-inch cubes
  • 1.5 lbs baby potatoes halved
  • 6 cloves garlic minced
  • 1/2 cup unsalted butter
  • 1 tbsp olive oil for searing
  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Prep: Trim and cube the beef. Halve the potatoes. Mince garlic.
  • Sear beef (optional): In olive oil, brown the beef cubes.
  • Garlic butter: Melt butter, sauté garlic, add thyme, salt & pepper.
  • Layer: Place potatoes in the slow cooker, add beef on top, pour garlic butter sauce.
  • Cook: LOW for 6–8 hours or HIGH for 3–4 hours.
  • Finish: Garnish with parsley and serve hot.

Notes

  • Searing the beef enhances flavor but is optional.
  • You can swap in sweet potatoes or use plant-based butter.
  • Great with cheesy garlic butter sides.
