- 2 lbs beef chuck cut into 1-inch cubes
- 1.5 lbs baby potatoes halved
- 6 cloves garlic minced
- 1/2 cup unsalted butter
- 1 tbsp olive oil for searing
- 1 tsp dried thyme
- Salt & pepper to taste
- Fresh parsley for garnish optional
Prep: Trim and cube the beef. Halve the potatoes. Mince garlic.
Sear beef (optional): In olive oil, brown the beef cubes.
Garlic butter: Melt butter, sauté garlic, add thyme, salt & pepper.
Layer: Place potatoes in the slow cooker, add beef on top, pour garlic butter sauce.
Cook: LOW for 6–8 hours or HIGH for 3–4 hours.
Finish: Garnish with parsley and serve hot.
