Ingredients
  

  • 1/2 cup unsalted butter melted
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1 cup buttermilk or milk + 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 can 21 oz lemon pie filling

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Melt butter in a 9x9-inch baking dish in the oven (3–4 mins).
  • Mix flour, baking powder, salt, and sugar in a bowl.
  • Add buttermilk, vanilla, and lemon extract; whisk until smooth.
  • Pour batter over melted butter (do not stir).
  • Spoon lemon pie filling on top (do not stir).
  • Bake for 45–55 mins, until golden and bubbling.
  • Cool 10–15 mins before serving.

Notes

  • Let cool slightly for the filling to set.
  • Add lemon zest for extra brightness.
  • Best served warm with ice cream or whipped cream.
  • Not ideal for freezing—store in fridge up to 3 days.
