- 1/2 cup unsalted butter melted
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup granulated sugar
- 1 cup buttermilk or milk + 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 1 can 21 oz lemon pie filling
Preheat oven to 350°F (175°C).
Melt butter in a 9x9-inch baking dish in the oven (3–4 mins).
Mix flour, baking powder, salt, and sugar in a bowl.
Add buttermilk, vanilla, and lemon extract; whisk until smooth.
Pour batter over melted butter (do not stir).
Spoon lemon pie filling on top (do not stir).
Bake for 45–55 mins, until golden and bubbling.
Cool 10–15 mins before serving.
