- 1 cup unsalted butter softened
- 1 ½ cups granulated sugar
- 2 large eggs
- ½ tsp lemon extract or vanilla
- 2 ½ cups all-purpose flour or 2 ¼ cups cake flour
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ¾ tsp salt
- 1 ½ cups Fruity Pebbles cereal divided for mixing + coating
Cream butter and sugar until fluffy.
Add eggs and extract; mix well.
Combine dry ingredients separately; then mix into wet ingredients.
Fold in 1 cup Fruity Pebbles.
Chill dough for 30 minutes.
Scoop dough, roll in remaining cereal, and place on baking sheet.
Bake at 350°F for 10–12 minutes.
Cool, then drizzle with glaze if desired.
