Ingredients
  

  • 1 cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • ½ tsp lemon extract or vanilla
  • 2 ½ cups all-purpose flour or 2 ¼ cups cake flour
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp salt
  • 1 ½ cups Fruity Pebbles cereal divided for mixing + coating

Instructions
 

  • Cream butter and sugar until fluffy.
  • Add eggs and extract; mix well.
  • Combine dry ingredients separately; then mix into wet ingredients.
  • Fold in 1 cup Fruity Pebbles.
  • Chill dough for 30 minutes.
  • Scoop dough, roll in remaining cereal, and place on baking sheet.
  • Bake at 350°F for 10–12 minutes.
  • Cool, then drizzle with glaze if desired.

Notes

  • For extra tenderness, use cake flour.
  • Don’t skip chilling—helps cookies hold their shape.
  • Cookies may look soft out of the oven but will firm as they cool.
  • Customize with mini marshmallows or white chocolate chips.
