Ingredients
  

  • ¾ cup cold water divided
  • 3 envelopes 7.5 tsp unflavored gelatin
  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • ¼ tsp salt
  • 1 –2 tsp cotton candy flavoring extract
  • Gel food coloring pink, blue – optional
  • ½ cup powdered sugar
  • ½ cup cornstarch

Instructions
 

  • Bloom Gelatin: Sprinkle gelatin over ½ cup cold water in a mixing bowl. Let sit 10 minutes.
  • Make Sugar Syrup: Combine sugar, corn syrup, remaining ¼ cup water, and salt in a saucepan. Heat to 240°F.
  • Whip: Carefully pour hot syrup into the gelatin mixture. Beat on high speed for 10–12 minutes until fluffy.
  • Flavor & Color: Add cotton candy extract and food coloring.
  • Set: Pour mixture into a greased or lined 9x9-inch pan. Let sit uncovered for 6+ hours.
  • Cut & Coat: Combine powdered sugar and cornstarch. Cut marshmallows and coat each piece to prevent sticking.

Notes

  • Use a stand mixer with a whisk attachment for best results.
  • To make them vegan, try agar-agar instead of gelatin (texture may vary).
  • Store in an airtight container at room temperature up to 2 weeks.
