Instructions
 

  • Preheat oven to 350°F (175°C).
  • Combine graham cracker crumbs, sugar, and butter; press into a lined 9x9-inch pan.
  • Bake crust for 10 minutes.
  • Beat cream cheese, sugar, eggs, and vanilla until smooth.
  • Fold in shredded coconut.
  • Pour filling over crust.
  • Bake 25–30 minutes.
  • Cool completely; refrigerate for 2 hours before slicing.
