For the Meatballs: 1 lb fresh salmonor canned, 1/2 cup breadcrumbs, 1/4 cup Parmesan cheese, 1/4 cup chopped parsley, 1 egg, 2 cloves garlic (minced), 1 tbsp Dijon mustard, 1 tbsp lemon juice, 1 tsp smoked paprika, salt & pepper.
For the Avocado Sauce: 1 ripe avocado1/4 cup Greek yogurt, 1 tbsp lime juice, 1 clove garlic (minced), salt & pepper.
Instructions
1️⃣ Preheat oven to 400°F (200°C).
2️⃣ Combine meatball ingredients, shape into golf-ball-sized meatballs, and place on a parchment-lined baking sheet.
3️⃣ Bake 15-20 minutes until cooked through.
4️⃣ Blend avocado sauce ingredients until smooth and creamy.
