Description

A sweet, smoky, and savory one-skillet meal made with tender chicken, fluffy rice, and colorful vegetables, coated in honey BBQ glaze.


Ingredients

Scale
  • 1 lb boneless (skinless chicken thighs (or breasts), cut into chunks)
  • 1 cup long-grain white rice (rinsed)
  • 2 cups chicken broth
  • ½ cup BBQ sauce (mesquite or honey-style)
  • ¼ cup raw honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp vegetable or olive oil
  • Optional: sliced green onions (parsley for garnish)

Instructions

  1. Season chicken with half the spices.
  2. Sear chicken in oil until golden; set aside.
  3. Toast rice with remaining spices.
  4. Add broth, BBQ sauce, honey; stir well.
  5. Nestle chicken back into pan.
  6. Cover and simmer 15 min.
  7. Add vegetables; cook 5 more min.
  8. Rest 5 minutes, fluff, and garnish before serving.

Notes

  • Rinse rice well for fluffier texture.

  • Chicken thighs stay juicier but breasts work too.

  • Add jalapeños or red pepper flakes for spice.

  • To use brown rice, increase broth and extend cook time.
