A sweet, smoky, and savory one-skillet meal made with tender chicken, fluffy rice, and colorful vegetables, coated in honey BBQ glaze.

- 1 lb boneless (skinless chicken thighs (or breasts), cut into chunks)
- 1 cup long-grain white rice (rinsed)
- 2 cups chicken broth
- ½ cup BBQ sauce (mesquite or honey-style)
- ¼ cup raw honey
- 1 cup mixed vegetables (frozen or fresh)
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- Salt and pepper to taste
- 2 tbsp vegetable or olive oil
- Optional: sliced green onions (parsley for garnish)
Instructions
- Season chicken with half the spices.
- Sear chicken in oil until golden; set aside.
- Toast rice with remaining spices.
- Add broth, BBQ sauce, honey; stir well.
- Nestle chicken back into pan.
- Cover and simmer 15 min.
- Add vegetables; cook 5 more min.
- Rest 5 minutes, fluff, and garnish before serving.
