Description

 

Festive jack-o’-lantern style stuffed peppers, perfect for Halloween dinner or party. Fun to carve, easy to make, and fully customizable.


Ingredients

– 4 large orange bell peppers (tops cut, seeds removed)

– 1 lb ground beef or turkey

– 1 cup cooked rice or cauliflower rice

– 1/2 cup chopped onion

– 1/2 cup tomato sauce

– 1 tsp garlic powder

– 1 tsp paprika

– Salt & pepper to taste

– 1/2 cup shredded cheddar cheese

– (Optional) black beans, corn, mushrooms


Instructions

1. Preheat oven to 375°F (190°C).

2. Carve jack-o’-lantern faces into peppers.

3. Cook onion, then add and brown meat.

4. Stir in rice, tomato sauce, spices. Simmer.

5. Stuff peppers and top with cheese.

 

6. Bake for 25–30 minutes. Let cool 5 minutes before serving.

Notes

– Use cauliflower rice for low-carb/keto version.

– For vegan option, use plant-based meat and vegan cheese.

– Make ahead and refrigerate up to 24 hrs before baking.

 

– Kid-friendly: avoid spice and add extra cheese!
