Instructions

Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.

In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.

In another bowl, cream butter and sugar until light and fluffy.

Beat in eggs, peppermint extract, and vanilla extract.

Alternate adding dry ingredients and milk into the butter mixture, mixing just until combined.

Fold in mini chocolate chips (if using).

Pour batter into prepared loaf pan.

Bake for 45–55 minutes or until a toothpick inserted in the center comes out clean.
