Ingredients

650g frozen peas (or petit pois)

6 rashers streaky bacon, sliced

1 medium onion, diced

2 garlic cloves, minced

750ml vegetable or chicken stock

1 medium potato, peeled & diced (optional, for thickness)

100ml double cream (optional)

1 tbsp olive oil or butter (if needed for sautéing)

Fresh herbs (parsley, thyme, or mint)

Salt & pepper to taste
Instructions

Cook bacon in a pot until crispy; set aside, leaving a little fat.

Sauté onion in bacon fat until softened; add garlic for 1 min.

Stir in peas (and potato, if using), then pour in stock.

Simmer 10–12 minutes until peas are tender.

Blend until smooth, or mash for a rustic texture.

Stir in cream (optional), season, and adjust consistency.

Garnish with crispy bacon, herbs, and cream swirls.
