Description

 

A magical green pea & bacon chowder with a smoky, creamy flavor and spooky “cauldron” look—perfect for Halloween or cozy weeknights.


Ingredients

  • 650g frozen peas (or petit pois)

  • 6 rashers streaky bacon, sliced

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 750ml vegetable or chicken stock

  • 1 medium potato, peeled & diced (optional, for thickness)

  • 100ml double cream (optional)

  • 1 tbsp olive oil or butter (if needed for sautéing)

  • Fresh herbs (parsley, thyme, or mint)

  • Salt & pepper to taste


Instructions

 

  1. Cook bacon in a pot until crispy; set aside, leaving a little fat.

  2. Sauté onion in bacon fat until softened; add garlic for 1 min.

  3. Stir in peas (and potato, if using), then pour in stock.

  4. Simmer 10–12 minutes until peas are tender.

  5. Blend until smooth, or mash for a rustic texture.

  6. Stir in cream (optional), season, and adjust consistency.

  7. Garnish with crispy bacon, herbs, and cream swirls.

Notes

 

  • For vegetarian version: skip bacon, add smoked paprika or roasted mushrooms.

  • Vegan option: use coconut milk and crispy smoked tofu.
