  • 2 ½ cups bread flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon olive oil
  • 1 cup warm water
  • 2 teaspoons instant yeast
  • For the Teriyaki Sauce
  • ¼ cup soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon brown sugar
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • For the Toppings
  • 1 chicken thigh fillet (sliced)
  • 1 cup mozzarella cheese (shredded)
  • ½ onion (thinly sliced)
  • ¼ cup shiitake mushrooms (sliced)
  • 2 tablespoons Japanese mayonnaise
  • 1 teaspoon toasted nori strips (optional)

Instructions

  1. Prepare the Dough
  2. Mix flour, salt, sugar, and yeast.
  3. Add warm water and olive oil, knead until smooth.
  4. Let it rest for 1 hour to double in size.
  5. Make the Teriyaki Sauce
  6. Combine soy sauce, mirin, sugar, garlic, and ginger in a saucepan.
  7. Simmer for 5 minutes until slightly thickened.
  8. Cook the Chicken
  9. Marinate the chicken in half the teriyaki sauce for 30 minutes.
  10. Pan-sear or grill until fully cooked.
  11. Assemble the Pizza
  12. Roll out the dough into a 12-inch round.
  13. Spread a thin layer of teriyaki sauce as the base.
  14. Add mozzarella cheese, chicken, onions, and mushrooms.
  15. Drizzle with Japanese mayonnaise.
  16. Bake to Perfection
  17. Preheat oven to 450°F (230°C).
  18. Bake for 12-15 minutes until golden and crispy.
  19. Garnish with toasted nori strips before serving.
