Ingredients

Scale
  • 1 lb ground beef or ground turkey
  • 8 oz spaghetti pasta
  • 1 packet taco seasoning mix
  • 1 can (10 oz Rotel tomatoes (diced tomatoes with green chilies))
  • 1 can (15 oz tomato sauce)
  • 1 cup shredded cheddar cheese
  • 1/2 cup Monterey Jack cheese
  • 1 tbsp olive oil
  • Optional add-ins: bell peppers (black beans, corn, jalapeños)

Instructions

  1. Cook the Pasta: Boil spaghetti in salted water until al dente. Drain and set aside.
  2. Prepare the Meat: In a skillet, heat olive oil, add ground beef, and cook until browned. Stir in taco seasoning, Rotel tomatoes, and tomato sauce. Simmer for 5-7 minutes.
  3. Combine Pasta and Sauce: Toss the cooked pasta with the meat mixture, ensuring everything is well coated.
  4. Add Cheese and Bake: Transfer to a baking dish, sprinkle with cheddar and Monterey Jack cheese, and bake at 350°F (175°C) for 15 minutes until bubbly.
  5. Serve: Garnish with cilantro, avocado, or sour cream for added flavor.

Notes

✅ For a spicy kick, add chipotle powder or hot sauce.
✅ Use whole wheat pasta or zucchini noodles for a healthier alternative.
✅ To prevent dryness, stir in extra tomato sauce or broth before baking.
