Ingredients
For the Potatoes:

4 large russet potatoes, diced

2 tbsp olive oil

1½ tbsp taco seasoning
For the Taco Meat:

1 lb ground beef (or turkey/plant-based)

½ cup water

1 packet taco seasoning
Toppings (Optional):

1 cup shredded cheddar cheese

½ cup sour cream or Greek yogurt

½ cup salsa or diced tomatoes

½ cup shredded lettuce

Avocado, jalapeños, green onions, hot sauce
Instructions

Preheat oven to 400°F (200°C).

Toss diced potatoes with olive oil and taco seasoning.

Spread on a baking sheet and roast for 35–40 minutes, flipping halfway.

In a skillet, cook ground beef until browned. Drain fat.
