Description

These taco potatoes are a delicious fusion of crispy roasted potatoes and classic taco toppings like seasoned ground beef, cheese, and sour cream. A family-friendly dish perfect for dinner, game night, or Taco Tuesday.

For the Potatoes:

  • 4 large russet potatoes, diced

  • 2 tbsp olive oil

  • 1½ tbsp taco seasoning

For the Taco Meat:

  • 1 lb ground beef (or turkey/plant-based)

  • ½ cup water

  • 1 packet taco seasoning

Toppings (Optional):

  • 1 cup shredded cheddar cheese

  • ½ cup sour cream or Greek yogurt

  • ½ cup salsa or diced tomatoes

  • ½ cup shredded lettuce

  • Avocado, jalapeños, green onions, hot sauce


Instructions

  • Preheat oven to 400°F (200°C).

  • Toss diced potatoes with olive oil and taco seasoning.

  • Spread on a baking sheet and roast for 35–40 minutes, flipping halfway.

  • In a skillet, cook ground beef until browned. Drain fat.

  • Add taco seasoning and water. Simmer 5–7 minutes.

 

  • Assemble by layering roasted potatoes, taco meat, cheese, and toppings.

Notes

  • Use Yukon Gold for creamier potatoes.

  • Substitute beef with black beans or tofu for a vegetarian option.
