Description
Sweet potato nachos are a healthy, crispy, and delicious alternative to traditional nachos, made with baked sweet potato slices and topped with cheese, black beans, jalapeños, and fresh ingredients. Perfect for a gluten-free, vegetarian, or customizable meal or snack!
Ingredients
- – Sweet potatoes (2–3 medium, sliced into ¼-inch rounds)
- – Olive oil or avocado oil (2 tbsp)
- – Spices: Paprika (1 tsp, Cumin (1 tsp), Garlic powder (½ tsp), Onion powder (½ tsp), Chili powder (½ tsp), Sea salt & black pepper (to taste))
- – Toppings: Shredded cheese (1 cup, Black beans (½ cup), Sliced jalapeños (1), Cherry tomatoes (½ cup, diced), Red onions (¼ cup, chopped), Fresh cilantro (¼ cup, chopped))
- – Optional Add-ons: Avocado (Lime wedges, Greek yogurt or sour cream, Protein (chicken, tofu, shrimp))
Instructions
- 1️⃣ Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2️⃣ Slice sweet potatoes into ¼-inch rounds and toss with oil & spices.
- 3️⃣ Bake for 25 minutes, flipping halfway until golden and crispy.
- 4️⃣ Push slices together, top with black beans, cheese, and jalapeños.
- 5️⃣ Bake for another 6–7 minutes until cheese melts.
- 6️⃣ Remove from oven and top with fresh toppings (tomatoes, onions, cilantro, avocado, etc.).
- 7️⃣ Serve with lime wedges, sour cream, or Greek yogurt. Enjoy!
Notes
– For extra crispiness: Use a mandoline slicer for even slices and avoid overcrowding the pan.
