Description

Sweet potato nachos are a healthy, crispy, and delicious alternative to traditional nachos, made with baked sweet potato slices and topped with cheese, black beans, jalapeños, and fresh ingredients. Perfect for a gluten-free, vegetarian, or customizable meal or snack!


Ingredients

  • – Sweet potatoes (2–3 medium, sliced into ¼-inch rounds)
  • – Olive oil or avocado oil (2 tbsp)
  • – Spices: Paprika (1 tsp, Cumin (1 tsp), Garlic powder (½ tsp), Onion powder (½ tsp), Chili powder (½ tsp), Sea salt & black pepper (to taste))
  • – Toppings: Shredded cheese (1 cup, Black beans (½ cup), Sliced jalapeños (1), Cherry tomatoes (½ cup, diced), Red onions (¼ cup, chopped), Fresh cilantro (¼ cup, chopped))
  • – Optional Add-ons: Avocado (Lime wedges, Greek yogurt or sour cream, Protein (chicken, tofu, shrimp))

Instructions

  1. 1️⃣ Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2️⃣ Slice sweet potatoes into ¼-inch rounds and toss with oil & spices.
  3. 3️⃣ Bake for 25 minutes, flipping halfway until golden and crispy.
  4. 4️⃣ Push slices together, top with black beans, cheese, and jalapeños.
  5. 5️⃣ Bake for another 6–7 minutes until cheese melts.
  6. 6️⃣ Remove from oven and top with fresh toppings (tomatoes, onions, cilantro, avocado, etc.).
  7. 7️⃣ Serve with lime wedges, sour cream, or Greek yogurt. Enjoy!

Notes

For extra crispiness: Use a mandoline slicer for even slices and avoid overcrowding the pan.
Want a spicy kick? Add hot sauce or extra jalapeños.
Make it protein-packed: Add grilled chicken, ground turkey, or tofu.
