- 1 can (15 oz black beans, drained & rinsed)
- 1 can (14.5 oz diced tomatoes)
- 1 small onion (chopped)
- 3 cloves garlic (minced)
- 2 cups vegetable broth
- 1 tbsp chili powder
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp chipotle powder (optional)
- 1 tbsp olive oil
- 1 tbsp lime juice
- Salt & black pepper to taste
- Fresh cilantro (avocado, or cheese for garnish (optional))
Instructions
- Sauté aromatics: Heat olive oil in a pot, then cook onions and garlic until soft.
- Toast spices: Stir in chili powder, cumin, smoked paprika, and chipotle powder. Cook for 1 minute.
- Add ingredients: Pour in diced tomatoes and vegetable broth, then add sweet potatoes. Simmer for 20-25 minutes.
- Stir in black beans: Let cook for 5 more minutes.
- Final touches: Stir in lime juice, season with salt & pepper, and garnish as desired.
Notes
- For extra protein, add quinoa, tofu, or lentils.
- Adjust spice levels to taste—jalapeños or extra chipotle powder for heat, or mild chili powder for a less spicy version.
