Ingredients

2 cups crushed sugar cookies (leftover or store-bought)

For the Cheesecake Filling:

1/2 cup sour cream

3 large eggs

2 tsp vanilla extract

Instructions

Preheat oven to 325°F (163°C). Grease or line a 9-inch springform pan.

Make the crust: Mix crushed sugar cookies with melted butter. Press into the pan and bake for 10 minutes.

Prepare the filling: Beat cream cheese and sugar until smooth. Add sour cream, eggs (one at a time), vanilla, and salt. Mix until just combined.

Pour over crust and smooth the top.

Bake for 50–60 minutes or until the center is just set and slightly jiggly.

Cool in oven with door slightly open for 1 hour, then chill in the fridge for at least 4 hours (preferably overnight).
