Ingredients

3 cups mashed potatoes (leftover or freshly made)

1 egg

½ cup shredded cheddar cheese (for potato mix)

Salt and pepper to taste

½ cup finely chopped vegetables (bell peppers, onions, spinach, etc.)

½ cup shredded mozzarella or cheese of choice (for filling)

Butter or oil for greasing muffin tin
Instructions

Preheat oven to 400°F (200°C) and grease a muffin tin.

In a bowl, mix mashed potatoes, egg, cheddar cheese, salt, and pepper.

Spoon the mixture into muffin tins, pressing in the center to create a nest shape.

Bake for 15–20 minutes until edges are golden and crisp.

Remove and fill nests with vegetables and mozzarella.

Return to oven for 5–7 minutes, until cheese melts.

Cool slightly before removing and serving.
