Description

Creamy mashed potatoes shaped into nests, baked and filled with cheese, veggies, or meat. A crowd-pleasing side or appetizer—crispy outside, soft inside.


Ingredients

Scale
  • 3 cups mashed potatoes (leftover or freshly made)

  • 1 egg

  • ½ cup shredded cheddar cheese (for potato mix)

  • Salt and pepper to taste

  • ½ cup finely chopped vegetables (bell peppers, onions, spinach, etc.)

  • ½ cup shredded mozzarella or cheese of choice (for filling)

  • Butter or oil for greasing muffin tin


Instructions

  • Preheat oven to 400°F (200°C) and grease a muffin tin.

  • In a bowl, mix mashed potatoes, egg, cheddar cheese, salt, and pepper.

  • Spoon the mixture into muffin tins, pressing in the center to create a nest shape.

  • Bake for 15–20 minutes until edges are golden and crisp.

  • Remove and fill nests with vegetables and mozzarella.

  • Return to oven for 5–7 minutes, until cheese melts.

 

  • Cool slightly before removing and serving.

Notes

  • Use cold mashed potatoes for better nest shaping.

  • Customize fillings with cooked bacon, sausage, or sautéed mushrooms.
