Description

A moist, tangy, bakery-style lemon loaf inspired by Starbucks, topped with a zesty lemon glaze. Simple, sweet, and perfect with coffee.

Ingredients

– 1½ cups all-purpose flour
– ½ tsp baking powder
– ½ tsp baking soda
– ¼ tsp salt
– 3 large eggs
– 1 cup granulated sugar
– ½ cup sour cream or Greek yogurt
– ½ cup vegetable oil
– 2 tbsp lemon juice
– 1 tbsp lemon zest
– 1 tsp lemon extract (optional)
– 1 tsp vanilla extract
Glaze: 1 cup powdered sugar + 2–3 tbsp lemon juice


Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
2. Mix flour, baking powder, baking soda, and salt.
3. In a separate bowl, whisk eggs, sugar, sour cream, oil, lemon juice, zest, extract, and vanilla.
4. Fold dry into wet ingredients; don’t overmix.
5. Pour batter into pan. Bake for 50–60 minutes.
6. Cool loaf completely.
7. Mix glaze and drizzle on top. Let set before slicing.

Notes

– For extra zing, add ½ tsp lemon zest to the glaze.
– Tent with foil if loaf browns too quickly.
– Substitute Greek yogurt for a protein boost.
– Can be frozen for up to 2 months.
