Ingredients

1.5 lbs salmon fillet (skinless, center-cut)

2 cups fresh spinach

½ cup feta cheese, crumbled

1 tablespoon olive oil

1 clove garlic, minced

2 scallions, chopped

Salt & pepper, to taste

Toothpicks or butcher’s twine (for securing rolls)
Instructions

Preheat oven to 375°F (190°C).

Butterfly the salmon fillet and lay it flat. Season with salt and pepper.

In a skillet, sauté garlic and scallions in olive oil, then add spinach. Cook until wilted.

Remove from heat, stir in feta, and let it cool.

Spread filling evenly on the salmon. Roll tightly from the short side.

Secure with twine or toothpicks. Slice into 1.5-inch thick pinwheels.

Bake for 20–25 minutes, or until salmon is cooked through.
