Description

An elegant yet easy seafood dish featuring flaky salmon, sautéed spinach, and tangy feta cheese, rolled into beautiful pinwheels. It’s low-carb, keto-friendly, and perfect for both weeknight dinners and special occasions.


Ingredients

Scale
  • 1.5 lbs salmon fillet (skinless, center-cut)

  • 2 cups fresh spinach

  • ½ cup feta cheese, crumbled

  • 1 tablespoon olive oil

  • 1 clove garlic, minced

  • 2 scallions, chopped

  • Salt & pepper, to taste

  • Toothpicks or butcher’s twine (for securing rolls)


Instructions

  • Preheat oven to 375°F (190°C).

  • Butterfly the salmon fillet and lay it flat. Season with salt and pepper.

  • In a skillet, sauté garlic and scallions in olive oil, then add spinach. Cook until wilted.

  • Remove from heat, stir in feta, and let it cool.

  • Spread filling evenly on the salmon. Roll tightly from the short side.

  • Secure with twine or toothpicks. Slice into 1.5-inch thick pinwheels.

  • Bake for 20–25 minutes, or until salmon is cooked through.

 

  • Serve warm with your favorite sides.

Notes

  • Use herbed feta for extra flavor.

  • Can be cooked in an air fryer at 375°F for 10–12 minutes.
