Description

A quick, flavorful twist on the classic quesadilla, combining Mediterranean spinach and feta with melty cheese and crispy tortillas. Perfect for lunch, dinner, or meal prep!


Ingredients

  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella
  • 1 tbsp chopped fresh dill or parsley
  • 2 large flour tortillas
  • 1 tsp olive oil or butter
  • Optional: minced garlic (lemon zest, chili flakes)

Instructions

  1. Sauté spinach until wilted (or thaw and squeeze if frozen).
  2. In a bowl, mix spinach, feta, mozzarella, and herbs.
  3. Heat skillet over medium.
  4. Place tortilla on skillet, spread filling evenly, and top or fold.
  5. Cook 2–3 minutes per side until golden and crispy.
  6. Let cool slightly, cut into wedges, and serve!
