Ingredients

1 medium spaghetti squash, halved and seeded

¾ cup sour cream (or Greek yogurt)

1 cup shredded cheddar cheese (or cheese blend)

Instructions

Preheat oven to 375°F (190°C).

Cook squash: Microwave or roast until tender. Scrape into strands.

Sauté onions: Cook with butter, spices, and seasoning until browned.

Mix: In a bowl, combine squash, onions, sour cream, and half the cheese.

Assemble: Transfer mixture to a greased baking dish and top with remaining cheese.

Bake for 20–25 minutes.
