Description

A creamy, cheesy, and low-carb baked dish made with spaghetti squash, ideal for healthy comfort food lovers.

Ingredients

Scale
  • 1 medium spaghetti squash, halved and seeded

  • 1 small yellow onion, thinly sliced

  • 3 tbsp butter or margarine

  • 1 tsp red pepper flakes (optional)

  • ¼ tsp garlic powder

  • Salt & black pepper, to taste

  • ¾ cup sour cream (or Greek yogurt)

  • 1 cup shredded cheddar cheese (or cheese blend)

  • Cooking spray or olive oil


Instructions

  • Preheat oven to 375°F (190°C).

  • Cook squash: Microwave or roast until tender. Scrape into strands.

  • Sauté onions: Cook with butter, spices, and seasoning until browned.

  • Mix: In a bowl, combine squash, onions, sour cream, and half the cheese.

  • Assemble: Transfer mixture to a greased baking dish and top with remaining cheese.

  • Bake for 20–25 minutes.

 

  • Broil for 2–3 minutes until golden and bubbly.

Notes

  • Roasting enhances squash flavor but takes longer than microwaving.

  • Add-ins: cooked bacon, spinach, mushrooms, or herbs.
