A moist and flavorful quick bread filled with fresh peaches, perfect for breakfast or dessert.
Ingredients
- – 2 cups all-purpose flour
- – 1 tsp baking powder
- – ½ tsp baking soda
- – ½ tsp salt
- – ½ cup vegetable oil or melted butter
- – 1 cup sugar
- – 2 large eggs
- – ½ cup sour cream or Greek yogurt
- – 1 tsp vanilla extract
- – 1 cup peeled and diced fresh peaches
- – Optional: ½ tsp cinnamon (½ cup pecans)
Instructions
- 1️⃣ Preheat oven to 350°F (175°C). Grease a 9×5” loaf pan.
- 2️⃣ Peel and dice peaches.
- 3️⃣ Mix dry ingredients in one bowl, wet ingredients in another.
- 4️⃣ Combine wet and dry ingredients, then fold in peaches (and pecans, if using).
- 5️⃣ Pour batter into pan; bake 55-65 minutes, until a toothpick comes out clean.
- 6️⃣ Cool for 10 minutes in the pan, then remove and cool on a wire rack.
Notes
– Toss diced peaches in flour to prevent sinking.
– Use ripe peaches for best flavor.
– Optional: Top with a brown sugar crumb or peach glaze.
