Description

A moist and flavorful quick bread filled with fresh peaches, perfect for breakfast or dessert.


Ingredients

  • – 2 cups all-purpose flour
  • – 1 tsp baking powder
  • – ½ tsp baking soda
  • – ½ tsp salt
  • – ½ cup vegetable oil or melted butter
  • – 1 cup sugar
  • – 2 large eggs
  • – ½ cup sour cream or Greek yogurt
  • – 1 tsp vanilla extract
  • – 1 cup peeled and diced fresh peaches
  • – Optional: ½ tsp cinnamon (½ cup pecans)

Instructions

  1. 1️⃣ Preheat oven to 350°F (175°C). Grease a 9×5” loaf pan.
  2. 2️⃣ Peel and dice peaches.
  3. 3️⃣ Mix dry ingredients in one bowl, wet ingredients in another.
  4. 4️⃣ Combine wet and dry ingredients, then fold in peaches (and pecans, if using).
  5. 5️⃣ Pour batter into pan; bake 55-65 minutes, until a toothpick comes out clean.
  6. 6️⃣ Cool for 10 minutes in the pan, then remove and cool on a wire rack.

Notes

– Toss diced peaches in flour to prevent sinking.
– Use ripe peaches for best flavor.
– Optional: Top with a brown sugar crumb or peach glaze.
