- 1.5 lbs baby potatoes (halved)
- 6 cloves garlic (minced)
- 1/2 cup unsalted butter
- 1 tbsp olive oil (for searing)
- 1 tsp dried thyme
- Salt & pepper (to taste)
- Fresh parsley for garnish (optional)
Instructions
- Prep: Trim and cube the beef. Halve the potatoes. Mince garlic.
- Sear beef (optional): In olive oil, brown the beef cubes.
- Garlic butter: Melt butter, sauté garlic, add thyme, salt & pepper.
- Layer: Place potatoes in the slow cooker, add beef on top, pour garlic butter sauce.
- Cook: LOW for 6–8 hours or HIGH for 3–4 hours.
- Finish: Garnish with parsley and serve hot.
