Ingredients

  • 2 lbs beef chuck (cut into 1-inch cubes)
  • 1.5 lbs baby potatoes (halved)
  • 6 cloves garlic (minced)
  • 1/2 cup unsalted butter
  • 1 tbsp olive oil (for searing)
  • 1 tsp dried thyme
  • Salt & pepper (to taste)
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep: Trim and cube the beef. Halve the potatoes. Mince garlic.
  2. Sear beef (optional): In olive oil, brown the beef cubes.
  3. Garlic butter: Melt butter, sauté garlic, add thyme, salt & pepper.
  4. Layer: Place potatoes in the slow cooker, add beef on top, pour garlic butter sauce.
  5. Cook: LOW for 6–8 hours or HIGH for 3–4 hours.
  6. Finish: Garnish with parsley and serve hot.

Notes

  • Searing the beef enhances flavor but is optional.

  • You can swap in sweet potatoes or use plant-based butter.
