Description

Sizzling shrimp fajitas made in under 30 minutes! Juicy shrimp are tossed in a zesty marinade, cooked with colorful bell peppers and onions, then wrapped in warm tortillas for a bold and fresh Tex-Mex meal.


Ingredients

  • 1 lb large shrimp (peeled and deveined)

  • 23 bell peppers (mixed colors, sliced)

  • 1 medium onion (sliced)

  • 2 tbsp olive oil

  • 2 cloves garlic (minced)

  • 1 lime (juiced)

  • 1 tsp chili powder

  • 1 tsp ground cumin

  • 1 tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp cayenne pepper

  • Flour or corn tortillas (6–8, warmed)

  • Optional toppings: sour cream, avocado, cilantro, shredded cheese


Instructions

  • Make Marinade: In a bowl, mix olive oil, lime juice, garlic, and all spices.

  • Marinate Shrimp: Add shrimp and toss to coat. Let sit for 15–30 minutes.

  • Sauté Veggies: In a hot skillet, cook onions and bell peppers until soft and slightly charred (about 7 minutes).

  • Cook Shrimp: Add shrimp to the pan and sauté for 1–2 minutes per side, until pink and cooked through.

 

  • Assemble Fajitas: Serve in warm tortillas with desired toppings.

Notes

  • Don’t marinate shrimp longer than 30 minutes or they may become mushy.

  • Use cast iron for the best sear.

  • To make it low-carb, serve in lettuce wraps or over cauliflower rice.
