Description

A tropical dessert featuring pineapple rings soaked in rum, coated in coconut, and fried to golden crisp perfection.

Ingredients

  • 8 pineapple rings

  • 1 cup dark rum

  • 1 cup coconut rum

  • 1½ cups all-purpose flour

  • 2 large eggs

  • ½ cup coconut milk

  • 10 oz sweetened coconut flakes

  • Vegetable oil, for frying


Instructions

  • Soak pineapple in dark and coconut rum for 1 hour.

  • Set up 3 bowls: flour, egg + coconut milk, and coconut flakes.

  • Dredge pineapple rings in flour → egg wash → coconut.

  • Heat oil to 350°F and fry each ring for 1 min per side.

 

  • Drain on paper towels. Serve warm (optionally with a rum-cream cheese dip).

Notes

  • For stronger flavor, soak overnight.

  • Use unsweetened coconut for less sugar.

  • Bake instead of fry at 400°F for a lighter version.

  • Can be served with ice cream, rum sauce, or whipped cream.
