Ingredients

8 pineapple rings

1 cup dark rum

1 cup coconut rum

1½ cups all-purpose flour

2 large eggs

½ cup coconut milk

10 oz sweetened coconut flakes

Vegetable oil, for frying
Instructions

Soak pineapple in dark and coconut rum for 1 hour.

Set up 3 bowls: flour, egg + coconut milk, and coconut flakes.

Dredge pineapple rings in flour → egg wash → coconut.

Heat oil to 350°F and fry each ring for 1 min per side.

Drain on paper towels. Serve warm (optionally with a rum-cream cheese dip).
Notes

For stronger flavor, soak overnight.

Use unsweetened coconut for less sugar.

Bake instead of fry at 400°F for a lighter version.
