Description

Soft, chewy, and gooey Pumpkin S’mores Cookies combine the nostalgic charm of classic s’mores with cozy pumpkin spice flavors—perfect for fall gatherings, bake sales, or late-night cravings.


Ingredients

  • 1 cup canned pumpkin purée

  • 1/2 cup unsalted butter, melted or browned

  • 1 cup brown sugar

  • 1/2 cup granulated sugar

  • 1 egg yolk

  • 2 tsp vanilla extract

  • 1 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp ground cloves

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 cups all-purpose flour

  • 1/2 cup graham cracker crumbs

  • 1 cup chocolate chips or chunks

  • 1 cup mini marshmallows


Instructions

  1. Mix butter and sugars until smooth. Add pumpkin, yolk, and vanilla.

  2. Whisk together dry ingredients and spices separately.

  3. Combine wet and dry mixtures, then fold in chocolate, graham crumbs, and half the marshmallows.

  4. Chill dough for 45–60 mins.

  5. Scoop onto baking sheet and bake at 350°F (175°C) for 8 minutes.

  6. Add more marshmallows on top, bake 3–4 more minutes.

  7. Cool on sheet for 5 minutes, then transfer to rack.

Notes

  • Use mini marshmallows to avoid excessive melting

  • Chill dough to prevent cookies from spreading

  • Slight underbaking gives a soft, chewy center
