Instructions
- Dice the pineapple and cucumber into bite-sized cubes.
- Finely chop the red onion and fresh cilantro.
- In a large mixing bowl, combine pineapple, cucumber, onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Fold in diced avocado and crumbled feta cheese, if using.
