  • 1 handful fresh cilantro (chopped)
  • 1 avocado (optional, diced)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • ½ teaspoon salt (adjust to taste)
  • Fresh black pepper (to taste)
  • 3 oz feta cheese (optional)

Instructions

  1. Dice the pineapple and cucumber into bite-sized cubes.
  2. Finely chop the red onion and fresh cilantro.
  3. In a large mixing bowl, combine pineapple, cucumber, onion, and cilantro.
  4. In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
  5. Pour the dressing over the salad and toss gently.
  6. Fold in diced avocado and crumbled feta cheese, if using.
