Description

A refreshing summer fruit salad made with juicy watermelon, ripe peaches, fresh herbs, creamy feta, and a zesty honey-lime dressing. Perfect for BBQs, picnics, or a light meal.


Ingredients

  • 4 cups cubed watermelon (seedless preferred)

  • 3 ripe but firm peaches, sliced

  • ½ cup crumbled feta cheese (or goat cheese/vegan alternative)

  • ¼ cup fresh mint or basil leaves, torn

  • Dressing:

    • 2 tbsp fresh lime juice

    • 1 tbsp honey (or agave for vegan)

    • 1 tbsp extra virgin olive oil

    • Pinch of salt and black pepper


Instructions

  • Cube watermelon and slice peaches, then place in a large bowl.

  • Add crumbled feta and fresh herbs.

  • In a small bowl, whisk lime juice, honey, olive oil, salt, and pepper.

  • Drizzle dressing over fruit, toss gently to combine.

 

  • Chill for 10–15 minutes before serving.

  • Swap feta for avocado or toasted nuts for a vegan version.

  • Use firm, ripe peaches to avoid mushy texture.
