Ingredients

  • 1 large head green cabbage
  • 2 tbsp olive oil (or garlic-infused oil)
  • 1 tbsp garlic paste (or minced garlic)
  • 1 tsp fennel seeds or caraway seeds (optional)
  • Salt and black pepper (to taste)
  • Fresh parsley or Parmesan for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice cabbage into 1 to 1.5-inch thick steaks, keeping the core intact.
  3. Brush both sides with garlic olive oil and season with salt, pepper, and seeds.
  4. Arrange steaks in a single layer on the sheet.
  5. Roast for 25 minutes, then flip and roast another 20 minutes until edges are crispy.
  6. Garnish and serve hot.

  • Preheating the baking sheet enhances crispiness.

  • Red cabbage can be used, though it won’t crisp as much.
