Description

A fresh, tangy, and easy-to-make salad featuring crisp cucumbers, juicy tomatoes, and sharp red onions marinated in a light vinaigrette. Perfect as a side dish for summer meals, barbecues, or light lunches.


Ingredients

  • 1 large English cucumber (thinly sliced)
  • 2 medium Roma or grape tomatoes (chopped)
  • 1 small red onion (thinly sliced)
  • ¼ cup apple cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey (or sugar, to taste)
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and black pepper (to taste)
  • Optional: chopped parsley (basil, or feta cheese)

Instructions

  1. Slice cucumbers, tomatoes, and onions; place in a large bowl.
  2. In a separate bowl, whisk vinegar, olive oil, honey, oregano, salt, and pepper.
  3. Pour dressing over vegetables and toss gently to coat.
  4. Cover and refrigerate for at least 30 minutes to marinate.
  5. Stir before serving; garnish with herbs or cheese if desired.

Notes

  • For a spicier version, add red pepper flakes or jalapeño.

  • Marinating overnight deepens flavor.

  • Use lemon juice instead of vinegar for a citrusy twist.
