Instructions
- Slice cucumbers, tomatoes, and onions; place in a large bowl.
- In a separate bowl, whisk vinegar, olive oil, honey, oregano, salt, and pepper.
- Pour dressing over vegetables and toss gently to coat.
- Cover and refrigerate for at least 30 minutes to marinate.
- Stir before serving; garnish with herbs or cheese if desired.
