Ingredients

  • 1/2 cup unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 1 cup buttermilk (or milk + 1 tbsp lemon juice)
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 1 can (21 oz lemon pie filling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in a 9×9-inch baking dish in the oven (3–4 mins).
  3. Mix flour, baking powder, salt, and sugar in a bowl.
  4. Add buttermilk, vanilla, and lemon extract; whisk until smooth.
  5. Pour batter over melted butter (do not stir).
  6. Spoon lemon pie filling on top (do not stir).
  7. Bake for 45–55 mins, until golden and bubbling.
  8. Cool 10–15 mins before serving.

Notes

  • Let cool slightly for the filling to set.

  • Add lemon zest for extra brightness.

  • Best served warm with ice cream or whipped cream.

  • Not ideal for freezing—store in fridge up to 3 days.
