A quick and easy citrus dessert that magically forms its own buttery crust over a tangy lemon filling. Perfect for gatherings or weeknight treats.

- 1/2 cup unsalted butter (melted)
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup granulated sugar
- 1 cup buttermilk (or milk + 1 tbsp lemon juice)
- 1 tsp vanilla extract
- 1 tsp lemon extract
- 1 can (21 oz lemon pie filling)
Instructions
- Preheat oven to 350°F (175°C).
- Melt butter in a 9×9-inch baking dish in the oven (3–4 mins).
- Mix flour, baking powder, salt, and sugar in a bowl.
- Add buttermilk, vanilla, and lemon extract; whisk until smooth.
- Pour batter over melted butter (do not stir).
- Spoon lemon pie filling on top (do not stir).
- Bake for 45–55 mins, until golden and bubbling.
- Cool 10–15 mins before serving.
