Ingredients
For the Crust & Topping (shared mixture):

7 tbsp unsalted butter, softened

¾ cup brown sugar

1 tsp vanilla extract

1 cup all-purpose flour

1 tsp baking powder
-
¼ tsp salt

1 cup old-fashioned oats
For the Lemon Filling:

1 can (14 oz) sweetened condensed milk
-
6 tbsp fresh lemon juice
-
1 tbsp lemon zest
Instructions

Preheat oven to 350°F (177°C). Line an 8×8-inch pan with parchment paper.

Mix crumble ingredients until crumbly.

Press half into pan for crust; bake 12 minutes.

Whisk filling ingredients together until thick.

Spread filling over crust, sprinkle remaining crumble on top.

Bake 23–25 minutes, until golden at edges.

Cool completely, slice into bars.
Notes

Use full-fat condensed milk only—do not substitute with evaporated milk.

Don’t overbake—bars firm up as they cool.

Bars can be frozen for up to 3 months.
-
Can be made gluten-free with 1:1 flour and certified GF oats.

Swap lemon for lime for a citrus twist.
