Description

Creamy, zesty bars with a sweet lemon filling layered between a buttery oat crumble. Easy to make, perfect for snacking or dessert.

For the Crust & Topping (shared mixture):

  • 7 tbsp unsalted butter, softened

  • ¾ cup brown sugar

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • ¼ tsp salt

  • 1 cup old-fashioned oats

For the Lemon Filling:

  • 1 can (14 oz) sweetened condensed milk

  • 6 tbsp fresh lemon juice

  • 1 tbsp lemon zest


Instructions

  • Preheat oven to 350°F (177°C). Line an 8×8-inch pan with parchment paper.

  • Mix crumble ingredients until crumbly.

  • Press half into pan for crust; bake 12 minutes.

  • Whisk filling ingredients together until thick.

  • Spread filling over crust, sprinkle remaining crumble on top.

  • Bake 23–25 minutes, until golden at edges.

 

  • Cool completely, slice into bars.

Notes

  • Use full-fat condensed milk only—do not substitute with evaporated milk.

  • Don’t overbake—bars firm up as they cool.

  • Bars can be frozen for up to 3 months.

  • Can be made gluten-free with 1:1 flour and certified GF oats.

 

  • Swap lemon for lime for a citrus twist.
