Description

Light, buttery cookies infused with zesty lemon and delicate lavender, perfect for tea time, spring gatherings, or gifting.


Ingredients

Scale
  • 2¼ cups all-purpose flour
  • – 1 tsp baking powder
  • – ¼ tsp salt
  • – ⅔ cup granulated sugar
  • – 1 tbsp dried culinary lavender buds
  • – Zest of 1 lemon
  • – ½ cup unsalted butter (room temp)
  • – 1 egg (room temp)
  • – ¼ cup fresh lemon juice
  • – 1 tsp vanilla extract
  • For the Glaze:
  • – 1 cup powdered sugar (sifted)
  • – 1 tbsp melted butter
  • – 1 tbsp lemon juice
  • – 1 tbsp lavender syrup

Instructions

  1. Blend sugar, lemon zest, and lavender in a food processor.
  2. Cream butter with lavender sugar until light.
  3. Add egg, lemon juice, and vanilla; mix.
  4. Gradually add dry ingredients; form dough.
  5. Chill dough for 2 hours.
  6. Roll into balls, flatten, and bake at 350°F for 10–12 minutes.
  7. Mix glaze ingredients and drizzle over cooled cookies.

Notes

 – Chill dough to maintain shape.
– Adjust lavender to taste if stronger or milder floral notes are desired.
– Cookies can be frozen (unbaked or baked without glaze).
