Description

Soft, chewy lemon brownies with bright citrus flavor and a zesty lemon glaze. Quick and easy to make with simple ingredients. Perfect for spring and summer!

Ingredients

Scale

For the Brownies:

  • ¾ cup all-purpose flour

  • ¾ cup granulated sugar

  • ¼ tsp salt

  • ½ cup unsalted butter, room temp

  • 2 large eggs

  • 2 tbsp lemon juice (fresh)

  • 2 tbsp lemon zest

For the Glaze:

  • 1 cup powdered sugar

  • 3 tbsp lemon juice

  • 23 tsp lemon zest

Instructions

  • Preheat oven to 350°F (175°C). Line an 8×8 pan with foil and lightly grease.

  • Mix flour, sugar, salt, and butter until well combined.

  • In another bowl, whisk eggs, lemon juice, and zest.

  • Combine wet and dry mixtures; beat for 2 minutes until creamy.

  • Pour batter into the pan and smooth the top.

  • Bake for 20–25 minutes until golden edges and a toothpick comes out clean.

  • Cool completely.

  • Mix glaze ingredients and spread over cooled brownies.

  • Chill in the fridge before slicing.

Notes

  • Use fresh lemon juice for best flavor—bottled juice lacks brightness.

  • For easier removal, use an aluminum foil sling.

  • Refrigerating overnight improves texture and flavor.

  • Don’t overbake—edges should be lightly golden.
