Ingredients

1 head iceberg lettuce, finely chopped

1 heart romaine lettuce, finely chopped

¾ cup Genoa or hard salami, finely diced

¾ cup mozzarella cheese, cubed or shredded

⅓ cup grated Parmesan cheese (optional)

1 cup canned chickpeas, rinsed and drained

Salt and pepper to taste
La Scala Vinaigrette:

¼ cup red wine vinegar

1 tablespoon Dijon mustard

1 teaspoon honey
-
½ teaspoon dried oregano
-
½ teaspoon kosher salt

¼ teaspoon ground black pepper

½ cup extra virgin olive oil
Instructions

Chop all ingredients finely, especially the lettuce, salami, and cheese. Uniformity is key.

Make vinaigrette by whisking together vinegar, mustard, honey, oregano, salt, and pepper. Slowly drizzle in olive oil until emulsified.

Combine chopped ingredients in a large bowl with chickpeas.

Pour dressing over salad, toss thoroughly to coat.
