Description

A vibrant, zesty Italian Lemon Jam made with just lemons, sugar, and water. This small-batch preserve is perfect for toast, baking, and gifting.


Ingredients

  • 4 large organic lemons

  • 2 cups granulated sugar

  • 1 cup water

  • ½ teaspoon vanilla extract (optional)


Instructions

  1. Wash, zest, and juice the lemons (remove seeds).

  2. In a saucepan, combine zest, juice, sugar, and water.

  3. Bring to a boil, then simmer for 30–40 minutes.

  4. Stir occasionally until jam thickens.

  5. Test doneness with a cold plate: it should wrinkle when nudged.

  6. Pour into sterilized jars, seal, and cool at room temperature.

Notes

  • Use Meyer lemons for a sweeter, floral flavor.

  • Add sprigs of rosemary or thyme for a savory twist.

  • Don’t overcook — jam thickens more as it cools.
