Description

A no-bake, cinnamon-dusted candy made with cream cheese, coconut, and powdered sugar. Despite the name, it contains no potatoes!


Ingredients

  • – 4 oz cream cheese (softened)
  • – ¼ cup butter (softened)
  • – 4 cups confectioners’ sugar
  • – 1 tsp vanilla extract
  • – 2½ cups shredded coconut
  • – 1 tbsp ground cinnamon

Instructions

  1. Beat cream cheese and butter until smooth.
  2. Add sugar and vanilla; mix well.
  3. Fold in coconut.
  4. Roll into small oval shapes.
  5. Roll in cinnamon.
  6. Chill 30 minutes before serving.

Notes

 Add a bit of cocoa powder to tone down cinnamon, or swap cinnamon with cocoa for a “darker skin” effect.
