Ingredients

4–5 medium carrots, peeled and sliced into sticks or rounds

1 cup white vinegar

1 cup water

2 tbsp honey (preferably hot honey or add chili flakes to regular honey)

1 tbsp sugar (optional, for extra sweetness)

2 cloves garlic, smashed

1 tsp salt

½ tsp red pepper flakes (adjust to taste)

½ tsp mustard seeds (optional)

¼ tsp black peppercorns
Instructions

Prep the carrots: Peel and cut carrots into desired shape (sticks or coins).

Make the brine: In a saucepan, combine vinegar, water, honey, salt, sugar (if using), garlic, pepper flakes, mustard seeds, and peppercorns. Bring to a boil.

Pack the jars: Place carrots into a clean, heatproof jar.

Add brine: Carefully pour the hot brine over the carrots until they are fully submerged.

Cool and refrigerate: Let cool to room temperature. Seal the jar and refrigerate. Best after 24 hours, keeps for up to 2–3 weeks.
