Description

A fresh, vibrant fruit salad made with ripe peaches, berries, pomegranate, honey, lime juice, and fresh basil. A perfect summer side dish that’s refreshing, healthy, and easy to customize for brunch, BBQs, or light meals.


Ingredients

  • 4 large ripe yellow peaches, sliced

  • 1 cup blackberries

  • ¾ cup blueberries

  • Seeds from 1 medium pomegranate

  • 6 large fresh basil leaves, thinly sliced

  • 12 teaspoons honey (or maple syrup for vegan)

  • Juice of ½ lime


Instructions

  • Slice the peaches and prep the berries and pomegranate seeds.

  • In a large bowl, combine all fruits.

  • In a small bowl, mix honey and lime juice.

  • Drizzle the dressing over the fruit and toss gently.

  • Add fresh basil ribbons just before serving and lightly toss again.

 

  • Chill for 15 minutes (optional) and serve cold.

  • Use firm, ripe peaches to prevent mushiness.

  • Substitute mint for basil for a flavor variation.

  • Make ahead by prepping the fruit, then adding basil just before serving.
