Ingredients
For the Dough:

1 ⅛ cup oat flour

½ cup tapioca flour (or cornstarch)

2 tbsp coconut sugar (or sweetener of choice)

½ cup vanilla protein powder

6 tbsp melted butter (or coconut oil)

½ cup milk (dairy or plant-based)

¼ tsp salt
For the Filling:

⅓ cup chia strawberry jam (or any fruit jam)
For the Frosting (Optional):

¼ cup vanilla protein powder

¼ cup powdered sugar

3–4 tbsp milk

Sprinkles or shredded coconut (optional)
Instructions

Preheat oven to 350°F (175°C).

In a mixing bowl, whisk together all dry ingredients.

Add melted butter and milk; mix until a dough forms.

Roll the dough between parchment sheets to ⅛” thickness.

Cut into rectangles (3×3″).

Add 1–2 tbsp of jam to half the pieces.

Place matching rectangles on top, seal edges with fork.

Transfer to a baking sheet lined with parchment paper.

Bake for 23–27 minutes or until golden.

Let cool completely before frosting.

Whisk frosting ingredients, spread on cooled tarts. Add sprinkles if desired.
