Description

These Healthy Protein Pop Tarts are a fun, nostalgic twist on the classic toaster pastry — but made with wholesome ingredients like oat flour, protein powder, and chia jam. Perfect for a quick breakfast, snack, or post-workout treat!


Ingredients

For the Dough:

  • 1 ⅛ cup oat flour

  • ½ cup tapioca flour (or cornstarch)

  • 2 tbsp coconut sugar (or sweetener of choice)

  • ½ cup vanilla protein powder

  • 6 tbsp melted butter (or coconut oil)

  • ½ cup milk (dairy or plant-based)

  • ¼ tsp salt

For the Filling:

  • ⅓ cup chia strawberry jam (or any fruit jam)

For the Frosting (Optional):

  • ¼ cup vanilla protein powder

  • ¼ cup powdered sugar

  • 34 tbsp milk

  • Sprinkles or shredded coconut (optional)


Instructions

  • Preheat oven to 350°F (175°C).

  • In a mixing bowl, whisk together all dry ingredients.

  • Add melted butter and milk; mix until a dough forms.

  • Roll the dough between parchment sheets to ⅛” thickness.

  • Cut into rectangles (3×3″).

  • Add 1–2 tbsp of jam to half the pieces.

  • Place matching rectangles on top, seal edges with fork.

  • Transfer to a baking sheet lined with parchment paper.

  • Bake for 23–27 minutes or until golden.

  • Let cool completely before frosting.

 

  • Whisk frosting ingredients, spread on cooled tarts. Add sprinkles if desired.

Notes

  • For gluten-free diets, use certified gluten-free oat flour.

  • Dough can be fragile—use parchment to roll and shape.

  • For vegan: use plant-based milk, butter, and vegan protein powder.
