Description
A healthy overnight breakfast casserole filled with berries, thick bread, and naturally sweetened with applesauce or banana. Perfect for meal prep and easy to customize!
Ingredients
- – 6 cups berries (32 oz)
- – 1 lb thick bread (cubed)
- – 1 1/3 cups applesauce or mashed banana
- – 2/3 cup milk of choice
- – 2/3 cup egg whites or additional milk
- – 1/4 cup pure maple syrup or agave or honey
- – 1 tsp pure vanilla extract (optional)
Instructions
- Cube bread and wash berries.
- Whisk applesauce/banana, milk, egg whites, syrup/honey, and vanilla.
- Layer bread and berries in a greased baking dish.
- Pour wet mixture evenly over.
- Cover and refrigerate overnight.
- Bake at 350°F (175°C) for 45–50 minutes.
- Let cool and enjoy!

– Use day-old bread for best texture.
– Customize with nuts, seeds, or different fruits.
– For a vegan version, use plant-based milk and skip egg whites.
