Description

A healthy overnight breakfast casserole filled with berries, thick bread, and naturally sweetened with applesauce or banana. Perfect for meal prep and easy to customize!


Ingredients

  • – 6 cups berries (32 oz)
  • – 1 lb thick bread (cubed)
  • – 1 1/3 cups applesauce or mashed banana
  • – 2/3 cup milk of choice
  • – 2/3 cup egg whites or additional milk
  • – 1/4 cup pure maple syrup or agave or honey
  • – 1 tsp pure vanilla extract (optional)

Instructions

  1. Cube bread and wash berries.
  2. Whisk applesauce/banana, milk, egg whites, syrup/honey, and vanilla.
  3. Layer bread and berries in a greased baking dish.
  4. Pour wet mixture evenly over.
  5. Cover and refrigerate overnight.
  6. Bake at 350°F (175°C) for 45–50 minutes.
  7. Let cool and enjoy!

Notes

– Use day-old bread for best texture.
