- 1.5 lbs baby potatoes (halved)
- 1 tbsp olive oil
- 1 tbsp butter
- 4 cloves garlic (minced)
- ½ cup heavy cream
- ¼ cup Parmesan cheese (grated)
- Salt & black pepper (to taste)
- Chopped fresh parsley (for garnish)
Instructions
- Boil potatoes in salted water until tender (10–12 minutes). Drain and set aside.
- In a skillet, heat olive oil and butter over medium heat. Add garlic and sauté until fragrant (1–2 minutes).
- Pour in cream and simmer for 3–4 minutes to thicken. Add Parmesan and stir to melt.
- Toss in the potatoes and coat evenly in the sauce.
- Garnish with chopped parsley and serve hot.
