Ingredients

  • 1.5 lbs baby potatoes (halved)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic (minced)
  • ½ cup heavy cream
  • ¼ cup Parmesan cheese (grated)
  • Salt & black pepper (to taste)
  • Chopped fresh parsley (for garnish)

Instructions

  1. Boil potatoes in salted water until tender (10–12 minutes). Drain and set aside.
  2. In a skillet, heat olive oil and butter over medium heat. Add garlic and sauté until fragrant (1–2 minutes).
  3. Pour in cream and simmer for 3–4 minutes to thicken. Add Parmesan and stir to melt.
  4. Toss in the potatoes and coat evenly in the sauce.
  5. Garnish with chopped parsley and serve hot.

  • To make it vegan, use plant-based butter, coconut cream, and nutritional yeast instead of cheese.
