Ingredients

- 1 ½ cups granulated sugar
- 2 large eggs
- ½ tsp lemon extract (or vanilla)
- 2 ½ cups all-purpose flour (or 2 ¼ cups cake flour)
- 1 ½ tsp baking powder
- ¼ tsp baking soda
- ¾ tsp salt
- 1 ½ cups Fruity Pebbles cereal (divided for mixing + coating)
Instructions
- Cream butter and sugar until fluffy.
- Add eggs and extract; mix well.
- Combine dry ingredients separately; then mix into wet ingredients.
- Fold in 1 cup Fruity Pebbles.
- Chill dough for 30 minutes.
- Scoop dough, roll in remaining cereal, and place on baking sheet.
- Bake at 350°F for 10–12 minutes.
- Cool, then drizzle with glaze if desired.
