Ingredients

  • 1 ½ cups granulated sugar
  • 2 large eggs
  • ½ tsp lemon extract (or vanilla)
  • 2 ½ cups all-purpose flour (or 2 ¼ cups cake flour)
  • 1 ½ tsp baking powder
  • ¼ tsp baking soda
  • ¾ tsp salt
  • 1 ½ cups Fruity Pebbles cereal (divided for mixing + coating)

Instructions

  1. Cream butter and sugar until fluffy.
  2. Add eggs and extract; mix well.
  3. Combine dry ingredients separately; then mix into wet ingredients.
  4. Fold in 1 cup Fruity Pebbles.
  5. Chill dough for 30 minutes.
  6. Scoop dough, roll in remaining cereal, and place on baking sheet.
  7. Bake at 350°F for 10–12 minutes.
  8. Cool, then drizzle with glaze if desired.

  • For extra tenderness, use cake flour.
