Ingredients

- 1 cup cottage cheese (full-fat preferred for creaminess)
- 1 –2 garlic cloves
- 1 tbsp olive oil
- 2 tbsp grated Parmesan cheese (optional)
- 1 tbsp lemon juice
- Salt & pepper to taste
- Optional: fresh basil (spinach, chili flakes, or nutritional yeast)
Instructions
- Add all ingredients to a blender or food processor.
- Blend for 30–60 seconds until completely smooth.
- Transfer to a saucepan and warm over low heat—do not boil.
- Toss with cooked pasta and garnish with fresh herbs or cheese if desired.
