- ¾ cup cold water (divided)
- 3 envelopes (7.5 tsp unflavored gelatin)
- 2 cups granulated sugar
- ½ cup light corn syrup
- ¼ tsp salt
- 1 –2 tsp cotton candy flavoring extract
- Gel food coloring (pink, blue – optional)
- ½ cup powdered sugar
- ½ cup cornstarch
Instructions
- Bloom Gelatin: Sprinkle gelatin over ½ cup cold water in a mixing bowl. Let sit 10 minutes.
- Make Sugar Syrup: Combine sugar, corn syrup, remaining ¼ cup water, and salt in a saucepan. Heat to 240°F.
- Whip: Carefully pour hot syrup into the gelatin mixture. Beat on high speed for 10–12 minutes until fluffy.
- Flavor & Color: Add cotton candy extract and food coloring.
- Set: Pour mixture into a greased or lined 9×9-inch pan. Let sit uncovered for 6+ hours.
- Cut & Coat: Combine powdered sugar and cornstarch. Cut marshmallows and coat each piece to prevent sticking.
