Description

Fluffy, pastel-colored cotton candy marshmallows are a fun homemade treat that combines carnival nostalgia with gourmet sweetness. Perfect for parties, gifting, and DIY dessert tables.

Ingredients

Scale
  • ¾ cup cold water (divided)
  • 3 envelopes (7.5 tsp unflavored gelatin)
  • 2 cups granulated sugar
  • ½ cup light corn syrup
  • ¼ tsp salt
  • 12 tsp cotton candy flavoring extract
  • Gel food coloring (pink, blue – optional)
  • ½ cup powdered sugar
  • ½ cup cornstarch

Instructions

  1. Bloom Gelatin: Sprinkle gelatin over ½ cup cold water in a mixing bowl. Let sit 10 minutes.
  2. Make Sugar Syrup: Combine sugar, corn syrup, remaining ¼ cup water, and salt in a saucepan. Heat to 240°F.
  3. Whip: Carefully pour hot syrup into the gelatin mixture. Beat on high speed for 10–12 minutes until fluffy.
  4. Flavor & Color: Add cotton candy extract and food coloring.
  5. Set: Pour mixture into a greased or lined 9×9-inch pan. Let sit uncovered for 6+ hours.
  6. Cut & Coat: Combine powdered sugar and cornstarch. Cut marshmallows and coat each piece to prevent sticking.

Notes

  • Use a stand mixer with a whisk attachment for best results.

  • To make them vegan, try agar-agar instead of gelatin (texture may vary).
