Ingredients
For the Cookies:

1 cup (2 sticks) unsalted butter, room temperature

1 cup light brown sugar, packed

1 large egg

1 tsp vanilla extract

2 cups all-purpose flour

½ cup cake flour

2½ tsp ground cinnamon

½ tsp baking soda

½ tsp baking powder

½ tsp kosher salt
For the Streusel:

½ cup all-purpose flour

½ cup granulated sugar

¼ cup unsalted butter, melted

½ tsp kosher salt
For the Glaze (Optional):

1 cup powdered sugar

1–2 tbsp milk (or to desired consistency)
Instructions

Preheat oven to 350°F (175°C). Line baking sheets with parchment.

Cream butter and brown sugar until light and fluffy.

Add egg and vanilla, mix well.

In another bowl, whisk dry ingredients: flours, cinnamon, soda, powder, and salt.

Mix dry into wet until just combined.

Combine streusel ingredients in a separate bowl until crumbly.

Scoop dough, flatten slightly, and top with streusel.

Bake 12–14 minutes or until edges are golden.

Cool, then drizzle with glaze.

Dough can be chilled for 30 minutes for thicker cookies.

Cookies freeze well before or after baking (skip glaze until serving).
