Ingredients

  • – 1 cup all-purpose flour (or coconut flour for gluten-free)
  • – 2 tsp baking powder
  • – ¼ tsp salt
  • – 1 cup coconut cream
  • – 2 eggs (or flax eggs)
  • – 2 tbsp sugar or honey
  • – 1 tsp vanilla extract
  • – Optional: shredded coconut (melted coconut oil)

Instructions

  1. Stir coconut cream to smooth any lumps.
  2. In a bowl, whisk flour, baking powder, and salt.
  3. In another bowl, whisk coconut cream, eggs, sugar, and vanilla.
  4. Combine wet and dry ingredients gently.
  5. Heat a skillet over medium heat; lightly grease.
  6. Pour ¼ cup batter per pancake; cook until bubbles form; flip and cook until golden.
  7. Repeat with remaining batter.

Notes

 – Rest batter for 5-10 minutes for extra fluffiness.
