Description

Moist and fluffy muffins swirled with sweet cherry pie filling and topped with a buttery cinnamon streusel — perfect for breakfast or dessert.

Ingredients

For the Muffin Batter:

  • 2 cups all-purpose flour or baking mix

  • ⅓ cup granulated sugar

  • 1 egg

  • ½ cup milk

  • 1 cup cherry pie filling (divided)

For the Streusel Topping:

  • ¼ cup all-purpose flour

  • 2 tbsp brown sugar

  • 2 tbsp melted butter

  • ½ tsp ground cinnamon


Instructions

  • Preheat oven to 375°F (190°C). Line or grease a 12-cup muffin tin.

  • In a bowl, whisk together flour and sugar. In another, mix egg and milk. Combine wet and dry ingredients until just mixed.

  • Fold in half of the cherry pie filling.

  • Spoon batter into muffin cups, filling ⅔ full. Top each with 2–3 cherries from the remaining filling.

  • Mix streusel ingredients and sprinkle evenly over muffins.

  • Bake for 22–25 minutes or until a toothpick comes out clean.

 

  • Cool in the pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use fresh cherries in place of pie filling during cherry season.

  • Substitute buttermilk for a richer flavor and softer crumb.

 

  • Streusel can be made ahead and stored in the fridge for up to 3 days.
