Description

These Brown Sugar Pop Tart Cookies are soft, chewy, and packed with nostalgic flavor. Crushed brown sugar Pop Tarts are folded into a brown sugar cookie dough, creating a rich, buttery treat with cinnamon undertones and a satisfying crunch in every bite.


Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 cup light brown sugar, packed

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tbsp vanilla extract

  • 2 ¾ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp ground cinnamon

  • 34 Brown Sugar Cinnamon Pop Tarts, roughly chopped

  • Optional: Cinnamon sugar for topping


Instructions

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  • Cream butter and sugars in a large bowl until light and fluffy (2–3 minutes).

  • Add eggs and vanilla, beat until well combined.

  • In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.

  • Gradually add dry ingredients to the wet mixture until just combined.

  • Gently fold in chopped Pop Tart pieces.

  • Scoop dough into 2 tbsp-sized balls and place on prepared baking sheets.

  • Optional: Sprinkle tops with cinnamon sugar.

  • Bake for 10–12 minutes, until edges are golden and centers are soft.

 

  • Cool on the pan for 5 minutes, then transfer to wire rack to cool completely.

Notes

  • For extra flavor, chill the dough for 30 minutes before baking.

  • Use fresh Pop Tarts to prevent crumbling.

 

  • Cookies will continue to set after baking, so avoid overbaking.
